Description
Super simple breakfast bowl made with lots of protein and vegetables.
Ingredients
- ½ pounds Ground Pork Sausage (or Your Favorite Sausage)
- 2 Tablespoons Olive Oil
- 1 Small Onion, Diced
- 1 cup Potato, Diced
- 4 Eggs, Beaten
- Salt And Pepper, to taste
- 1 Roma Tomato, Diced
- 1 cup Shredded Sharp Cheddar Cheese
Preparation
In a large saute pan over medium heat, add sausage. Cook until fully cooked and browned, about 10 minutes. Remove sausage from pan to drain.
Place pan back on stove and add olive oil. Add diced onions, potatoes and pinch of salt. Feel free to add other vegetables you may have on hand (mushrooms, bell peppers, etc.). Saute until onions are transparent and vegetables are tender, about 5–7 minutes.
Move vegetables to side of pan and add beaten eggs, salt and pepper. Stir eggs occasionally to ensure they are fully cooked. Return sausage to pan and add tomatoes and cheese. Mix until everything is well-combined.
Serve warm and enjoy!
