Description
Pasta tossed with bell peppers, sweet Italian sausage, red onion, and a light white wine tomato sauce.
Ingredients
- 1 Tablespoon Olive Oil
- 4 whole Sweet Italian Sausages, Sliced
- 3 whole Bell Peppers, Cut Into Strips
- 1 whole Red Onion, Sliced Thin
- ¼ cups White Wine
- 15 ounces, fluid Tomato Sauce
- 2 teaspoons Dried Italian Seasoning
- 1 teaspoon Kosher Salt
- ¼ teaspoons Black Pepper
- 8 ounces, weight Casarecce, Or Other Short Pasta, Cooked
- Fresh Chopped Parsley, For Garnish
Preparation
Boil pasta according to package directions. Drain.
In a large pan, heat olive oil over medium heat. Add sausage and brown it on all sides until cooked through. Remove the sausage from the pan.
In the same pan, cook peppers and onion until soft.
Add wine to the peppers and onions and simmer until most of it evaporates. Add tomato sauce, Italian seasoning, salt and pepper and, using tongs, toss everything together until peppers and onions are coated in the sauce. Add sausage and cooked pasta to the peppers and onions and stir to combine.
Garnish with parsley and serve.
