Description
Melt in your mouth, cream cheese zucchini French toast is creamy and crunchy at the same time. Great way of feeding zucchini to kids.
Ingredients
- 4 whole Large Organic Eggs
- 4 Tablespoons Fat Free Cream Cheese, Room Temperature
- 4 Tablespoons Warm Water
- 2 whole Medium Zucchini, Thinly Grated (I Didn’t Peel It)
- 1 whole Small Onion, Thinly Grated (I Used White Onion, You May Use Any Variety)
- 1 teaspoon Salt As Per Taste
- ½ teaspoons Black Pepper Powder – As Per Taste
- 4 Tablespoons Olive Oil, Or Any Flavorless Oil Of Choice
- 8 slices Wheat Bread (You Can Use Any Variety & Texture Of Bread)
Preparation
1. In a large bowl, whisk the eggs together until a frothy-creamy mixture is formed (around 2 minutes).
2. Add cream cheese and warm water and whisk for another minute or until the mixture is smooth with no lumps.
3. Now add zucchini, onion, salt and pepper to this mixture and gently mix everything together (if you mix with a heavy hand or too much, it will make the eggs watery).
4. Heat a non-stick pan on high, add 1 tablespoon of oil and wait till the pan is hot (about a minute).
5. Now dip a slice of bread into the egg mixture, coat it evenly on both sides and place it on the heated pan (I’m able to accommodate 3 slices at a time in a large pan).
6. Now reduce the heat to low and let the bottom side cook evenly until it’s golden brown (takes about 1-2 minutes. You may lift a corner of the slice to check if it’s golden brown).
7. After 2 minutes, flip the slices, add ½ tablespoon of oil to the pan and let the other side cook till it’s golden brown. Remove cooked toast to a plate.
8. Follow steps 5, 6 and 7 until all of the slices are cooked.
9. Serve hot with iced coffee or your choice of beverage.
