Eggs coated in herbed mince. Delicious!
Ingredients
- 8 Eggs, Divided
- ½ whole Brown Onion, Chopped Finely
- 2 stalks Spring Onion, Chopped Finely
- 1 clove Garlic, Crushed
- ½ bunches Parsley, Finely Chopped
- 1 Tablespoon Thyme Leaves (fresh)
- 1 Tablespoon Chives (fresh), Chopped Finely
- 1 pound Beef Mince (or Pork, Veal)
- 1 Tablespoon Mustard
- 1 pinch Salt
- 1 pinch Pepper
- 1 cup Plain Flour
- 1 cup Breadcrumbs
- ½ teaspoons Dry Mixed Herbs
- Vegetable Oil, As Needed For Frying
Preparation
Preheat oven to 350ºF (180ºC). Hard-boil 6 eggs. Cool, then peel.
Saute onion, spring onion and garlic until onion is almost translucent. Add parsley, thyme and chives until wilted.
Beat 1 of the remaining eggs and mix with the mince. Add ingredients from pan to the mince mix, along with mustard, salt and pepper.
Place flour in a shallow pan or bowl. Beat remaining egg and place in a separate shallow pan or bowl. Finally, place breadcrumbs, mixed herbs, and salt and pepper in a third pan or bowl.
Roll peeled eggs in the flour. Wrap in the mince mix, coat in egg, then roll in the breadcrumb mixture.
Deep fry for about 1 minute in vegetable oil until golden brown. Bake for about 20–30 minutes until mince is cooked through.
