Smoked Salmon is a great alternative to bacon for a protein-loaded brunch!
Ingredients
- 6 whole Eggs
- 2 Tablespoons Heavy Cream
- ½ teaspoons Salt
- ½ teaspoons Ground Black Pepper
- 1 Tablespoon Butter
- 4 slices Sourdough Bread, Sliced And Toasted
- 5 ounces, weight Smoked Salmon, Shredded Into Pieces
- 1 Tablespoon Fresh Dill
Preparation
In a medium bowl, whisk eggs together with heavy cream, salt and pepper.
Melt butter in nonstick skillet over medium low heat. Add egg mixture, stirring occasionally. Cook until the eggs reach your desired consistency.
Serve eggs over toasted sourdough bread, divide salmon evenly on top of eggs, then garnish with dill.
