Scrambled Eggs with Spinach and Chives

Description

The perfect breakfast for one or two.

Ingredients

  • 2 whole Eggs
  • ¼ cups Baby Spinach, Chopped
  • ⅛ cups Chives, Chopped
  • ⅛ cups Cheddar Cheese, Shredded
  • 1 Tablespoon Half-and-half
  • Salt And Pepper, to taste
  • Olive Oil, For Cooking Eggs

Preparation

Whisk all ingredients together in a small bowl.

Heat olive oil over medium heat and add egg mixture.

Using a spatula, stir the egg mixture constantly until no longer runny. Make sure you don’t overcook the eggs or they will be dry.

Remove eggs immediately from the skillet and serve with toast.
