Have dinner ready in no time with this wonderfully delicious, sweet, and savory one-pan meal that’s a breeze to prepare.

Ingredients

  • 8 whole Chicken Drumsticks
  • 2 whole Delicata Squash (about 1½ – 2 Pounds) Cut In ⅓ Inch Slices And Seeded
  • 1 cup Coarsely Chopped Red Onion
  • 1-½ cup Whole Red Seedless Grapes
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Honey
  • 2 teaspoons Balsamic Vinegar
  • 1 teaspoon Tarragon
  • 1 teaspoon Salt
  • ¼ teaspoons Black Pepper

Preparation

Preheat oven to 375ºF. Prep the delicata, onion, and grapes. For the delicata, cut it into ⅓ inch slices and scoop out the seeds. A metal, teaspoon-sized measuring spoon makes a great scoop. Set aside. Note that yes, you can eat the skin of delicata squash

In a large bowl whisk together the olive oil, honey, balsamic vinegar, tarragon, salt and pepper. Next, add the produce and the the chicken drumsticks to the bowl and stir to coat everything in the marinade.

Dump the marinated produce and meat onto a large, parchment-lined baking sheet and evenly spread the mixture out over the baking sheet. Bake at 375ºF for 35–45 minutes or until the internal temperature of the chicken reaches 170ºF and the delicata is fork tender. Serve immediately.
