This is one of my most versatile recipes and an easy weekend dinner for the mom on the go. You’re able to mix up the ingredients and seasonings to completely change this dish.
Ingredients
- 1 pound Chicken Sausage (any Variety)
- 1-½ pound Red Potatoes
- 1 Onion
- 1 Zucchini
- 1 Bell Peppers (prefer Red, Yellow Or Orange)
- 2 cloves Garlic, Minced
- 1 teaspoon Dried Rosemary Or Italian Seasoning
- Salt And Pepper, to taste
- 2 teaspoons Extra Virgin Olive Oil
Preparation
Preheat oven to 400ºF and coat a large baking sheet with nonstick cooking spray.
Cut sausage, potatoes, onion, zucchini and peppers into 1-inch chunks to make sure all ingredients cook evenly. You can substitute or add in mushrooms or your other favorite vegetables!
Mix garlic, rosemary, salt, pepper and olive oil. Combine all other ingredients on the baking sheet. Drizzle olive oil mixture over chicken sausage, potatoes, onion and peppers. Toss to coat evenly and spread ingredients out in a single layer.
Bake for 30–40 minutes, or until potatoes are tender and everything is cooked through.
