Ingredients
- ½ cups Low-sodium Chicken Broth Or Stock
- ¾ cups Cold Water
- ½ stalks Celery
- ½ whole Carrot, Peeled
- Salt And Black Pepper To Taste
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 4 ounces, weight Bone-in Chicken Breast
- FOR THE SANDWICH:
- 1 Tablespoon Mayonnaise
- 1 whole Sesame Seed Roll Or Bun
- 2 leaves Fresh Lettuce
- 2 slices Ripe Tomato
- Sliced Cheese And Bacon, To Assemble (optional)
Preparation
In a pot, bring stock (or broth) and water to a boil. Add celery, carrot, seasonings, and chicken breast. Cover and cook 20 minutes on medium heat. Remove from heat and allow to cool down. Shred chicken breast (I prefer shredding it in larger pieces).
To assemble sandwich, add mayonnaise to the bottom of roll or bun. Add lettuce leaves, tomato, shredded chicken breast, cheese and bacon if desired, then cover with top of roll. Plate and serve.
