Ingredients
- FOR THE SHRIMP:
- 4 Tablespoons Unsalted Butter
- ½ Red Onion, Chopped
- 4 cloves Garlic, Minced
- 1 Bay Leaf
- 1 teaspoon Red Pepper Flakes
- 1 pound Peeled And Deveined White Shrimp
- Kosher Salt And Freshly Ground Pepper
- ½ Lemon, Juiced
- ¼ cups Chopped Parsley
- FOR THE PEA PUREE:
- 3-½ cups Frozen Shelled Peas
- ⅓ cups Heavy Cream
- 2 Tablespoons Unsalted Butter
- ½ teaspoons Dried Thyme
- Kosher Salt And Freshly Ground Pepper
Preparation
For the shrimp:
Melt butter on a skillet at low-medium heat. Add onion, garlic and bay leaf until fragrant, about 2–3 minutes. Add red pepper flakes.
Add shrimp and season with salt and pepper. Cook for about 4 minutes. Add lemon juice and finish with parsley. Serve with pea puree.
For the pea puree:
Boil peas for about 3 minutes. Drain and set aside.
Heat heavy cream on a small pot. Add butter, dried thyme, salt, and pepper.
Add peas and heavy cream mixture into a blender container and blend.
