Simple Salsa

Description

Sauteing the garlic, jalapeno, and onion beforehand really takes this salsa above and beyond.

Ingredients

  • 5 whole Tomatoes Of Your Choosing
  • 1 Tablespoon Olive Oil
  • 1 cup Purple Onion, Divided
  • 3 cloves Garlic, Minced
  • 1 whole Jalapeno Finely Chopped, Seeds And Stem Removed (reserve Seeds)
  • 1 bunch Cilantro, Finely Chopped
  • 1 whole Lime, Juiced
  • ½ teaspoons Sea Salt
  • 1 teaspoon Pepper
  • ½ teaspoons Cumin

Preparation

In a food processor, chop tomatoes down into tiny bits.

In a skillet add oil, 1/4 cup onion, garlic, and jalepeno. Saute for 2 minutes. Remove from heat and toss into a chilled bowl.

Add tomatoes to the chilled bowl, juice and all. Add in the cilantro, lime juice, salt, pepper, and cumin. Adjust salt as desired. Chill for at least 1 hour.
