Skillet Baked Stuffed Apples

Description

My family loves the smell of these while they are baking. They are so flavorful. A real treat during the cool fall months.

Ingredients

  • 3 Tablespoons Sweet Cream Butter, Melted
  • 6 whole Large Baking Apples
  • ¼ cups Instant Oats
  • ¼ cups Brown Sugar
  • 2 Tablespoons Granulated Sugar
  • 1-½ teaspoon Cinnamon
  • ½ teaspoons Nutmeg
  • ½ teaspoons Pure Vanilla Extract
  • 1 teaspoon Pure Almond Extract
  • ¼ cups Chopped Pecans
  • 1 cup Pure Apple Juice (Divided Use)

Preparation

Preheat oven to 400 F. Add melted butter into a 10″ cast iron or other oven safe skillet and set aside.

Peel each apple and cut 1/2″ off the top of the apple (discard the top). Using a paring knife remove the core and cut the inside flesh out of each apple (leave at least 1/8″ around the outside of the apple to form a cup). Place apple flesh in a mixing bowl. This procedure will take a few minutes so be patient. It is so worth the effort! If a serrated spoon is easier for you to use to remove interior flesh use that instead. The goal is to form a good size cup to hold the filling.

In the mixing bowl with the apple flesh add the oats through chopped pecans on the above list. Mix well with a spatula or spoon. Add half of the apple juice and stir again. Fill each apple cup with the filling mixture.

Add filled apples into the skillet and add the remaining apple juice into the skillet. Cover the skillet with foil and bake 15 minutes. Remove foil and bake for an additional 6-8 minutes to brown up the top. Remove from oven.

Allow to cool a bit before serving. I love this served with a side of vanilla frozen yogurt or vanilla bean ice cream. I hope you enjoy these as much as we do!
