Description
Zesty skillet chicken fajitas, sizzled to perfection in a cast iron skillet.
Ingredients
- 3 whole Limes, Juiced
- 1 Tablespoon Olive Oil
- ½ teaspoons Chili Powder
- ½ teaspoons Garlic Powder
- ½ teaspoons Ground Pepper
- ¼ teaspoons Salt
- 1 pinch Cayenne Pepper Powder
- 2 whole Boneless, Skinless Chicken Breasts, Sliced Into Strips
- 3 whole Bell Peppers (green, Yellow, Orange, And/or Red), Sliced
- 1 whole White Onion, Sliced
- FOR ASSEMBLING FAJITAS:
- Flour Tortillas, To Serve
- 1 bunch Chopped Cilantro (optional)
- 1 cup Guacamole (optional)
- 1 cup Salsa (optional)
- 1 cup Cheese (optional)
Preparation
For the chicken marinade, add lime juice, olive oil, chili powder, garlic powder, pepper, salt, and cayenne pepper to a glass bowl. Stir to combine. Set aside.
Slice uncooked chicken breasts into thin strips, and add to marinade. Stir to coat all the pieces, cover and place in the fridge to marinate for at least 1 hour.
If you are going to serve garnishes (guacamole, cilantro, grated cheese, salsa), prepare those now.
When ready to cook chicken, heat cast iron skillet to medium-high heat and add chicken and any remaining marinade. Cook until chicken is done; remove chicken from skillet and cover with foil to keep warm.
Add peppers and onions to the skillet and cook until almost tender. Add chicken back in and cook for a few minutes until veggies are tender.
Remove from heat and serve immediately with warm flour tortillas and optional side items.
