Ingredients
- 2-½ Tablespoons Olive Oil, Divided
- 3 pieces Tilapia Or Other Mild White Fish
- 2 cups Grape Or Cherry Tomatoes
- Salt And Pepper
- Fresh Parsley Or Basil, For Garnish
Preparation
Heat a skillet over medium-high heat and add 1 tablespoon olive oil.
Sprinkle fish with salt and pepper. Add to pan and saute for about 3 minutes each side or until fish is cooked through. Remove to a plate and cover with foil.
Add remaining 1 1/2 tablespoons olive oil to pan and tomatoes. Salt and pepper to taste. Cook for about 4 minutes or until they get some browning and start to blister, tossing occasionally.
Add fish back to the same pan and warm for a minute. Serve immediately.
