Skillet Zucchini Parmesan

Description

Great Italian main dish for two on any weeknight.

Ingredients

  • 2 cups Your Favorite Marinara Or Tomato Sauce
  • 1-½ teaspoon Dry Italian Seasoning
  • 2 whole Medium Zucchini, Peeled, Cut Into 1/4-inch Rounds
  • ½ whole Yellow Onion, Sliced Thinly
  • 1 cup Freshly Grated Parmesan Cheese
  • 1 cup Freshly Grated Mozzarella Cheese

Preparation

Preheat oven to 400ºF.

In a 10-inch skillet (I use cast iron), add marinara or tomato sauce and Italian seasoning. Stir gently, then layer zucchini rounds and onions (they can overlap). Sprinkle grated cheeses evenly across the top. Cover with aluminum foil and place on middle rack in the oven. Bake for 25 minutes, then remove foil and bake an additional 5 minutes to crisp up the cheeses.

Serve with a side salad and bread sticks, or whatever you might enjoy. I grow zucchini in my home garden and this is a family favorite dish. Perfect for two!
