Description
These Skinny Red Velvet Truffles are filled with red velvet chocolate, Greek yogurt and a touch of sweetness. Healthy and bursting with flavor!
Ingredients
- ¾ cups Red Velvet Cake Mix (from A Box Of Cake Mix)
- ¼ cups Plain, Nonfat Greek Yogurt (See Note)
- ½ Tablespoons Honey (See Note)
- ½ teaspoons Vanilla Extract
- ¼ cups Unsweetened Cocoa Powder
Preparation
In a medium bowl, combine the cake mix, yogurt, honey and vanilla. Taste as you go along and sweeten to your preferences. Once mixture is smooth, place bowl in the refrigerator and chill for at least 1 hour, or up to 4 hours.
Put the cocoa powder in a shallow bowl or saucer. Use a small spoon or melon ball scoop to scoop mixture into your preferred size. Using your hands, shape the dough into a ball, roll in the cocoa powder and place onto a sheet of parchment paper.
Serve immediately or refrigerate until ready to serve. Enjoy!
Notes:
1. Truffles will keep in an airtight container in the refrigerator for up to 5 days.
2. The amount of honey and yogurt that you use depends on how sweet you want your truffles. The directions listed above are the measurements that I used, but feel free to increase the increments by 1/2 teaspoon until it reaches your desired sweetness.
