Here’s an easy crowd-pleasing snack you can make for your parties before your barbecued meats are ready. As the hot smoked nuts emerge from your pit, your guests are sure to be drawn in by the buttery sweet fragrance of rosemary in your backyard.
Ingredients
- FOR THE NUTS:
- 1-½ pound Mixed Nuts Of Your Choice
- 1 Tablespoon Brown Sugar
- 1 Tablespoon SYD Rub (recipe Below)
- 1 Tablespoon Butter, Melted (I Used Unsalted Butter)
- 2 Tablespoons Finely Chopped Fresh Rosemary
- ½ teaspoons Cayenne Pepper
- ¼ teaspoons Ginger Powder
- FOR THE SYD RUB MIXTURE:
- 4 Tablespoons Kosher Salt
- 2 Tablespoons White Granulated Sugar
- 2 Tablespoons Brown Sugar
- 2 Tablespoons California Mild Chili Powder
- 2 Tablespoons Paprika
- 1 Tablespoon Ground Cumin
- 1 Tablespoon Granulated Garlic
- 1 Tablespoon Black Pepper
- ½ teaspoons Cayenne Pepper (Use Sparingly Or Not At All)
Preparation
Special equipment: You will need a barbecue pit, a large aluminum foil roasting pan and a tennis-ball sized apple wood chunk.
Heat your barbecue pit to 350 F. Add the tennis ball-sized apple wood chunk. Put nuts into the foil pan and smoke in the pit for 15 minutes or until they are golden brown Stir once during the smoking process.
Combine the brown sugar, SYD rub, butter, rosemary, ginger and cayenne in a bowl. Toss the mixture with the smoked nuts when you remove them from the pit. Serve immediately.
For my Slap-Yo-Daddy rub: Combine all ingredients in a small bowl. Store leftovers in a sealed container.
