“Slapped” Cucumbers

Description

My own version of a spicy appetizer we had while traveling through China.

Ingredients

  • ½ teaspoons Kosher Salt
  • 1 whole Large Cucumber, Cut Into Bite Sized Pieces
  • ½ teaspoons Asian Style Chile Oil
  • 1 Tablespoon Low Sodium Soy Sauce
  • 1 teaspoon Rice Vinegar
  • 2 pinches Sugar
  • 2 cloves Garlic, Minced Or Grated
  • Sesame Seeds And Red Pepper Flakes For Garnish

Preparation

Combine the salt with cucumber. Let sit in the refrigerator for 30 minutes. Meanwhile combine the rest of the ingredients to form a sauce. Drain excess liquid from cucumber and toss cucumber with prepared sauce. Garnish with sesame seeds or red pepper if desired. Serve cold.
