Description
This pork is super tender and flavorful. You can serve it as a main meal, or make the greatest pulled pork sandwiches for lunch.
Ingredients
- 6 pounds Pork Butt Roast
- 1 teaspoon Sea Salt
- 1 teaspoon Black Pepper
- 4 whole Shallots, Peeled And Quartered
- 2-½ cups Low Sodium Vegetable Stock
- ¼ cups Brown Sugar
- 1 Tablespoon Fresh Grated Ginger
- 2 Tablespoons Chili Powder
Preparation
In a slow cooker, place pork and season with salt and pepper. Add shallots.
In a blender, add vegetable stock, brown sugar, ginger, and chili powder. Blend on low speed for a few minutes. Pour over pork. Place lid, set temperature to medium, and cook 6 hours.
Remove from slow cooker and transfer to a large platter. Use forks to pull pork apart.
We love pulled pork sandwiches on rolls, served with crispy baked sweet potato wedges. Enjoy!
