Slow Cooker Chicken and Sausage Cacciatore

Description

This dish cooks slowly in the crockpot and requires very little preparation. I take two of my favorite Italian dishes, Chicken Cacciatore and Sausage and Peppers, and mix them together. Why not?

Ingredients

  • 2  Medium Yellow Onions
  • 3  Green Bell Peppers
  • 3 pounds Boneless, Skinless Chicken Breast (w/ Rib Meat)
  • 2 pounds Hot Italian Sausage, Cut Into Thirds
  • 1 pound Mushrooms
  • 28 ounces, fluid Tomato Sauce
  • 4 cloves Garlic
  • Italian Seasoning
  • Red Cayenne Pepper
  • Pasta, If Desired For Serving

Preparation

Chop onions and peppers and add them into a large slow cooker. Lay chicken breasts on top of the vegetables, trying not to let breasts touch (they may stick together). Put the sausage on top of the chicken.

Wash the mushrooms, and place them over the meat. Pour tomato sauce over all the ingredients. Chop garlic, and throw it on top. Sprinkle some Italian seasoning and red cayenne pepper over the top if you want a little heat.

Cover the slow cooker and cook on low for 4–6 hours. After 4 hours, chicken can be shredded if desired. Mix it up and serve. Goes great with pasta.
