Ingredients
- 3 pounds Chuck Roast
- ½ Tablespoons Salt
- 2 pinches Black Pepper
- 1 Yellow Onion, Chopped
- 1 Tomato, Choopped
- 3 cloves Garlic, Minced
- 2 Limes, Juiced
- 1 can (4 1/2 Oz. Size) Green Chiles
- 1 Chipotle Adobo From Can, Chopped
- 1 Tablespoon Cumin
- ½ Tablespoons Chili Powder
- 1 teaspoon Smoked Paprika
- 1 Bay Leaf
- ¼ cups Water Or Beef Broth
- 1 Tablespoon Fresh Cilantro For Garnish
Preparation
Trim large chunks of fat off roast. Cut roast into large chunks. Season meat with salt and pepper and sear in a hot pan until all sides have browned. Add meat to slow cooker.
Add remaining ingredients and stir to combine. Cook on low for 5–6 hours, or until meat is pull-apart tender. Garnish with fresh cilantro.
