Ingredients

  • 1 can (20 Oz. Size), Pineapple Chunks In Natural Juice
  • ¼ cups Brown Sugar
  • 1 Tablespoon Apple Cider Vinegar
  • 1 Tablespoon Soy Sauce
  • 2 teaspoons Curry Powder
  • 1 teaspoon Ground Ginger
  • ½ teaspoons Red Pepper Flakes
  • 6 whole (6 Oz. Size) Bone-in Pork Chops
  • 1 teaspoon Salt
  • ½ teaspoons Pepper
  • 1 Tablespoon Water
  • 2 teaspoons Cornstarch

Preparation

Pour the pineapple with its juice, sugar, vinegar, soy sauce, curry powder, ginger and red pepper flakes into the slow cooker and stir to combine. Season the pork chops with salt and pepper. Nestle them into the slow cooker, making sure to cover them with the pineapple mixture. Cook on low for 6–8 hours or 3–5 hours on high.

Once cooked, remove the pork chops from the slow cooker. Remove from the meat from the bones first and then shred the meat. Remove fat from the liquid in the slow cooker and then transfer to a saucepan.

In a separate bowl, combine water and corn starch and then add to the braising liquid. Cook over medium low heat for 10–15 minutes until thickened.

Pour the braising sauce over the shredded pork and serve as desired.
