Description
This Slow Cooker Southwest Chicken has so much flavor but is still lighter for the warm weather. Perfect for serving over your favorite starches or veggies!
Ingredients
- 1-½ pound Boneless, Skinless Chicken Breasts
- 1 can (15 Oz. Size) Black Beans, Undrained
- 1-½ cup Frozen Or Fresh Corn Kernels
- 1 can (28 Oz. Size) Diced Tomatoes
- 1 whole Lime, Juiced
- 1-½ teaspoon Red Adobo Seasoning
- 1 teaspoon Garlic Powder
- 1 teaspoon Salt
- ½ teaspoons Paprika
- ¼ cups Shredded Cheddar Cheese, Plus Additional For Topping
- Avocado And Salsa, For Topping (optional)
Preparation
Combine chicken, beans, corn, diced tomatoes, lime juice and seasonings, transfer into a slow cooker. Mix, then close and turn it to low. Cook for 5 hours.
After 5 hours, add 1/4 cup of cheese to the slow cooker and stir it in. Close it again and cook for another hour.
Remove the lid and shred chicken with 2 forks. Serve immediately over your choice of veggie or starch, with any number of toppings like avocado, extra cheese or salsa! The leftovers are great too.
