Slow cooker stuffed peppers will quickly become a family favorite!
Ingredients
- 5 whole Bell Peppers, Tops And Seeds Removed
- 1 pound Ground Turkey
- ½ cups Cooked White Rice
- 1-½ cup Shredded Monterey Jack Cheese, Divided
- 1 can (15 Oz. Size) Black Beans, Drained
- 1 can (15 Oz. Size) Corn, Drained
- 1 cup Salsa
- 1 teaspoon Cumin
- ¼ teaspoons Cayenne Pepper
- 1 teaspoon Chili Powder
- 1 teaspoon Salt
- ½ teaspoons Pepper
Preparation
Spray the inside of your slow cooker with cooking spray. Place the bell peppers cut side up in the slow cooker.
In a large bowl, combine ground turkey, rice, 1 cup of cheese, black beans, corn, salsa, cumin, cayenne, chili powder, salt and pepper. Divide the mixture evenly among the bell peppers.
Cover and cook on high for 2–3 hours or low for 5–6 hours. Once meat has cooked through, uncover and top with remaining cheese. Cover and cook for an additional 20 minutes, or until cheese melts.
Serve immediately with desired toppings.
