Description
A high protein and low fat mackerel pate which is perfect spread on toast for lunch or as a light starter!
Ingredients
- 200 grams Smoked Mackerel
- 2 whole Spring Onion, Finely Chopped
- 2 sprigs Dill Chopped
- 30 grams Cress, Finely Chopped
- 1 whole Lemon, Half The Zest And All The Juice
- 100 grams Low-fat Cream Cheese
- ½ teaspoons Creamed Horseradish
- ½ teaspoons Mustard
- 1 pinch Black Pepper
Preparation
Begin by roughly chopping the smoked mackerel and throwing into a large bowl. Add spring onions, dill and cress and mix together. Add lemon juice and zest and stir.
Add cream cheese, creamed horseradish and mustard. Stir and taste and season accordingly.
Serve with a little cress on top with lemon wedges and toast.
