Tender and juicy smoked pork loin.
Ingredients
- 8 pounds Pork Loin
- FOR THE BRINE:
- 2 Tablespoons Ground Black Pepper
- ½ cups Sugar
- ¼ cups Salt
- ½ quarts Apple Juice
- ½ quarts Apple Cider Vinegar
- FOR THE RUB:
- 1-½ teaspoon Chili Powder
- ¼ cups Paprika
- ¼ cups Sugar
- 3 Tablespoons Cajun Seasoning
- 1 Tablespoon Salt
Preparation
Mix brine ingredients and add pork loin. Refrigerate overnight.
Mix rub ingredients in a bowl. Take pork loin out of the brine and coat with spice rub. Rest for 1 hour.
Preheat smoker to 250ºF and add wood chips. Place pork loin in the smoker and smoke for 3 hours or until internal temperature reaches 180ºF.
