Description

Smoked salmon, ripe avocado and runny egg over buttered whole grain toast. Alaska breakfast with a California twist.

Ingredients

  • 2 slices Whole Grain Bread, Toasted And Buttered
  • 1 whole Ripe Avocado, Peeled, Pitted And Sliced
  • 2 whole Eggs, Seasoned With Salt And Pepper And Cooked Sunny Side Up And Runny
  • 2 ounces, weight Smoked Salmon, Flaked
  • 1 Tablespoon Green Onions Or Chives, Sliced
  • Lemon Wedges, For Serving (optional)
  • Sriracha Sauce, For Serving (optional)

Preparation

To assemble: Place buttered toast on 2 serving plates, top each with some avocado slices, followed by an egg, some salmon, and some green onions or chives. Serve with lemon wedges or Sriracha sauce.

Notes:
This would also be terrific with softly scrambled eggs.
