Delicious sous vide fried chicken.
Ingredients
- Salt And Pepper, to taste
- 6 pieces Chicken Legs
- FOR THE COATING:
- 1 whole Egg, Beaten
- 1 cup Soy Milk
- 2 cups All-purpose Flour
- 1 Tablespoon Salt
- 1 teaspoon Ground Black Pepper
Preparation
Start sous vide machine and heat water to 155ºF.
Sprinkle salt and pepper on all chicken legs. Place seasoned chicken in a resealable bag and seal using water immersion method. Cook for 3 hours.
In a bowl, combine egg and milk. In another bowl, combine flour, salt, and pepper.
After sous vide bath finishes, remove chicken from bag and set aside.
Preheat pan over medium high heat and add oil. Bring oil to 425ºF.
Coat each chicken with flour mixture, then dip into wet mixture. Finally, dip back into flour mixture. Fry each chicken leg for 3–4 minutes. Let chicken rest for 15 minutes before serving.
