Description

This Southwest Scramble Tostada is simple, 20-minute breakfast that is sure to get your day off to a great start!

Ingredients

  • 2 Tablespoons Unsalted Butter
  • ¼ cups Diced Green Pepper
  • ¼  Small Red Onion, Diced
  • ¼ cups Fresh Or Frozen Corn
  • 1  Roma Tomato, Diced
  • Salt And Pepper, to taste
  • 8  Eggs, Beaten
  • ½ cups Shredded Cheddar Cheese
  • 4  Tostada Shells, Warmed
  • Salsa And Sour Cream, To Serve (optional)

Preparation

In a large skillet, melt butter over medium heat. Add green peppers and onions. Saute for about 2–3 minutes, or until tender.

Add corn, diced tomato, salt, and pepper. Stir to combine.

Add eggs and cheese to skillet. Stir until eggs are scrambled and no liquid remains.

Serve eggs over tostada shells. Top with additional cheese, salsa, and/or sour cream, if desired. Enjoy!
