Description

Bake up some vegetarian Southwestern Egg Rolls. They’re easy to make and fun to eat.

Ingredients

  • 1 whole Red Pepper Finely Chopped
  • 1 whole Jalapeño, Finely Chopped
  • 3 whole Green Onions, Finely Chopped
  • 2 ears Corn, Kernels Removed
  • 15-½ ounces, weight Can Black Beans, Drained And Rinsed
  • 5 whole Sun-dried Tomatoes, Finely Chopped
  • 5 sprigs Cilantro, Stems Removed, Finely Chopped
  • 1 pinch Salt
  • 1 package (16 Oz. Size) Egg Roll Wraps

Preparation

Preheat oven to 400ºF.

Sauté red pepper, jalapeño, and green onion until they are slightly tender. Turn off heat and stir in corn, black beans, sun-dried tomatoes and cilantro. Salt to taste.

Roll 2 tablespoons of mixture into each egg roll wrapper. Fold the bottom corner in, then the side corners, then roll.

Spray lightly with cooking spray and bake for 12 minutes or until they begin to brown.
