Description
My husband loves big flavors. For many years I’ve been looking for a spaghetti sauce that he approves of. When I came up with this, he said it was better than the sauce at our favorite restaurant. So I knew it was the one that I’d put in my collection of “Bear-approved” recipes.
Ingredients
- 2 Tablespoons Olive Oil
- 1 Small Onion, Chopped
- 8 cloves Garlic, Minced
- 1 pound Ground Italian Sausage
- 6 ounces, weight Canned Tomato Paste
- 6 ounces, weight Water
- 24 ounces, weight Canned Fire-Roasted Crushed Tomatoes, Pureed
- 2 Tablespoons Sugar
- 1 pinch Garlic Powder
- 2 pinches Dried Oregano
- 2 pinches Dried Basil
- Salt And Pepper, to taste
Preparation
1. Heat the oil in a large pan or deep skillet over medium heat. Add the onion and garlic and cook until the onion starts to soften. Be careful not to burn the garlic. This takes about 2-3 minutes.
2. Place the Italian sausage in the pan with the garlic and onion and brown meat until cooked.
3. Add the tomato paste, water, pureed fire-roasted tomatoes, sugar, garlic powder, oregano, basil and salt and pepper.
4. Bring the mixture to a boil then reduce heat and let sauce simmer for 2 hours (or more). I do not completely cover the pot while the sauce is simmering. I place the lid on at a tilt to keep the sauce from splattering all over my kitchen.
5. Serve over pasta.
