Description
A healthy, fluffy, thick Blueberry Pancake, made with Greek yogurt and spelt pancake mix.
Ingredients
- ⅓ cups Greek Yogurt, Plain, Non-fat
- 2 whole Egg Whites
- ½ teaspoons Vanilla Extract
- ⅓ cups Spelt Pancake Mix (See Note)
- ½ teaspoons Sugar
- ⅔ cups Blueberries
Preparation
In a small bowl, mix Greek yogurt, egg white and vanilla extract. In a separate bowl, combine pancake mix and sugar. Combine and whisk till evenly mixed. Fold in blueberries.
Place scant 1/4-cup batter onto a nonstick skillet and cook till bubbles start appearing through the top of the pancake; flip.
Note: If you don’t have spelt pancake mix, you can substitute any pancake mix you have or add 1/3 cup whole wheat flour, 1/2 teaspoon baking powder and a dash of salt to the recipe.
