Description

Spicy Green Goddess Halloumi Sandwich made with an easy homemade herb and avocado spread, then piled on hearty bread for a quick, delicious, and healthy sandwich.

Ingredients

  • FOR THE SPICY GREEN GODDESS SPREAD:
  • ½  Avocado
  • ½  Jalapeno (seeds Removed)
  • ¼ cups Greek Yogurt
  • ¼ cups Dill
  • ¼ cups Mint
  • ¼ cups Parsley
  • ¼ cups Basil
  • 1 clove Garlic
  • 1  Scallion
  • 2 Tablespoons Lemon Juice
  • Salt To Taste
  • FOR THE SANDWICH:
  • 8 slices Halloumi
  • 8 slices Bread
  • 1 cup Power Greens
  • 1  Cucumber, Sliced

Preparation

In a food processor or blender, add all spread ingredients. Process until smooth. Set aside.

Heat a large skillet over medium heat. Once hot, add halloumi slices and cook for 1–2 minutes per side, or until golden. Remove from skillet and set aside.

Spread ¼ of the spread on one slice of bread. Layer with power greens, 2 slices grilled halloumi, and sliced cucumber. Top with second slice of bread. Repeat with remaining ingredients.
