Preparation
Note: This is an excellent recipe for pizza dough. The dough can be prepared and used immediately, or let it rise, wrap in freezer wrap and freeze for future use. If frozen, just let it thaw for several hours or overnight, roll it out and top with your favorite toppings.
For the crust:
Dissolve yeast in the warm water. Add flour and salt; mix well. Add olive oil and knead for about 6–7 minutes.
Let rise for about 45 minutes to 1 hour in large oiled bowl. At this point, if you are freezing, wrap the dough well in freezer wrap and freeze for up to one month. Let thaw for several hours or overnight. Punch down and spread onto oiled 16-inch pizza pan.
For the pizza:
Heat oven to 375ºF.
Spread tomato sauce onto pizza crust. Spread cheese evenly on top. Top with pepperoni, hot and green pepper, garlic, and olives. It is very important to make sure the garlic and the hot pepper are very finely minced so as not to be overpowering.
Bake at 375ºF for 11 minutes. Raise to broil and broil for another 3 minutes. This step is important because it further cooks the garlic and hot pepper.
Let cool for 3–4 minutes, slice, serve and enjoy!
