This is another protein-packed “keep you going for the long haul” breakfast. With spinach, ground beef, and eggs, how could you not be stuffed for hours? Right?
Ingredients
- 1 pound Ground Beef Or Sausage
- ½ cups Diced Onion
- Salt And Pepper
- 4 cups Packed Spinach, Washed Or A 10 Oz. Box Frozen
- 2 cloves Garlic, Grated On Micro Plane
- 6 whole Beaten Eggs
- ¼ cups Grated Parmesan Cheese
Preparation
In a frying pan, saute the ground meat and onion until meat is cooked thoroughly. Season with salt and pepper. Add spinach and garlic, cooking until spinach is wilted or heated if you used frozen. Stir in eggs. Cooked until eggs are desired doneness. Top with Parmesan cheese and serve.
