Spinach Herb Greek Yogurt Dip

Description

A delicious dip that is perfect on crackers, with veggies, spread over sandwiches, or even over tacos.

Ingredients

  • 2 cloves Garlic
  • ¼ cups Green Onions, Sliced
  • ¼ cups Parsley, Roughly Chopped
  • 1 cup Fresh Spinach
  • 2 cups Nonfat Greek Yogurt
  • 1 cup Feta Cheese
  • ½ teaspoons Sea Salt
  • ¼ cups Pistachios, Finely Chopped

Preparation

In a food processor, blend garlic, green onions, parsley, and spinach into a fine paste. Add in yogurt, feta, salt and pepper. Blend until fully combined.

Taste and adjust seasoning if needed.

Top with chopped pistachios and serve with whole wheat pita crackers, carrot sticks and celery sticks.

This dip is also great on sandwiches!
