Delicious and easy dish for lunch or a light dinner.
Ingredients
- 1 Tablespoon Olive Oil
- 1 package (10 Oz. Package) Frozen Spinach, Thawed
- 1 teaspoon Minced Garlic
- ½ teaspoons Dried Minced Onion Flakes
- 2 dashes Crushed Red Pepper Flakes
- ½ teaspoons Salt
- ¼ teaspoons Pepper
- 6 whole Eggs
- 1-½ cup Mozzarella Cheese, Shredded, Plus 2 Tablespoons For Topping
- ¼ cups Feta Cheese, Crumbled
Preparation
Heat oil in large saute pan over medium-high heat. Saute spinach, garlic, onion flakes, and red pepper flakes until heated through, about 5-7 minutes. Add salt and pepper. Taste and add more seasoning to your liking. Set aside.
Preheat oven to 350 degrees F. Spray a 9-inch pie plate with non-stick cooking spray.
Stir together eggs, 1 1/2 cup mozzarella, and feta in a medium bowl. Stir in the spinach mixture. Pour into the prepared pie plate. Sprinkle with remaining 2 tablespoons mozzarella cheese.
Bake for 25-30 minutes or until a knife inserted in the center comes out clean.
