Description
Strawberries and whipped coconut cream. The perfect vegan dessert.
Ingredients
- 2 pounds Strawberries
- 1 can (13 1/2 Oz. Size) Coconut Milk
- 2 Tablespoons Coconut Sugar
Preparation
Arrange the strawberry halves in a bowl.
Open the can of coconut milk and scoop off just the solid coconut into a medium-sized bowl. Discard clear liquid underneath or reserve for another use.
Use a handheld mixer to whip coconut solids into a thick cream. This should take a minute or so. As you whip the cream, add the coconut sugar. Once thick, simply scoop onto the strawberries.
