Description
These are simple and amazing little strawberry bliss energy bites with lots of almond and coconut flavor! Perfect for breakfast or a snack on the go.
Ingredients
- 1 cup Chopped Fresh Strawberries
- ¼ cups Chopped Almonds
- ¼ cups Shredded Coconut
- 2 Tablespoons Almond Butter
- 2 Tablespoons Coconut Flour
Preparation
Combine strawberries, sliced almonds, coconut, and almond butter in a food processor and pulse it all together until it is well mixed but not liquified. Stir in coconut flour so that it is more moldable.
Form mixture into 8 little balls using a 1 1/2 inch cookie scoop and place on a plate. Refrigerate for 30 minutes to let them firm up. They will still be pretty soft though. Once they firm up, fill up a small bowl with more coconut and roll each ball in it to coat them. Enjoy as you want them, keep them stored in a sealed container in the refrigerator!
