Description
This strawberry coconut chia pudding is the easiest and healthiest recipe ever. It is made with chia, coconut milk and strawberry! Gluten-free and dairy-free!
Ingredients
- 3 Tablespoons Chia Seeds
- 1 cup Coconut Milk
- 1 Tablespoon Agave Nectar (or Honey)
- 1 teaspoon Pure Vanilla Extract
- 2 cups Hulled Chopped Fresh Strawberries Plus Extra For Garnish If Desired
- 1 Tablespoon Coconut Flakes
Preparation
In a medium bowl, combine the chia seeds and coconut milk together and stir very well to avoid any chunks. Add the agave and vanilla extract and mix everything very well. Using plastic wrap, cover the bowl and refrigerate for about 4-5 hours.
When the chia pudding is ready to be served, puree the strawberries in a food processor. Mix the pureed strawberries and chia pudding together. Top the pudding with coconut flakes and more strawberries.
