Strawberry Mango Salsa

Description

I created this strawberry mango salsa as an accompaniment to blackened mahi mahi (the blackening seasoning recipe is also in my recipe box). The sweet flavors of the mango and strawberries are a great contrast to the spicy kick of the blackened fish!

Ingredients

  • 1 cup Diced Strawberries
  • 1 cup Diced Mango
  • 1 cup Diced Red Onion
  • 1 whole Medium Sized Jalapeno, Diced
  • ½ cups Chopped Fresh Cilantro
  • 2 Tablespoons Lime Juice
  • 1 Tablespoon Cider Vinegar
  • 1 teaspoon Sugar
  • ½ teaspoons Salt
  • ½ teaspoons Black Pepper
  • 2 cloves Garlic, Minced

Preparation

1. Combine diced fruit, jalapenos, cilantro, lime juice, cider vinegar, and sugar.

2. Add salt, pepper, and minced garlic.

3. Allow at least 20 minutes to let flavors develop (refrigerate if desired).

4. Serve salsa on top of blackened fish. Keep leftovers refrigerated, but consume any leftovers shortly after making.

Note: This recipe yields enough for 4 very generous portions.
