Strawberry Pancakes made with strawberry puree. Yum!
Ingredients
- 6 whole Strawberries, Pureed
- 1-½ cup All-purpose Flour
- 1-¾ Tablespoon Baking Powder
- 3 Tablespoons Butter, Melted
- 1-½ cup Milk
- 2 whole Eggs
- ½ teaspoons Pure Vanilla Extract
Preparation
Use a food processor or blender to puree the strawberries, about 6-8 of them depending on how much you would like.
In a medium sized bowl, combine flour and baking powder and slightly whisk.
In a separate bowl, whisk together butter, milk and eggs.
Make a well in the dry ingredients and slowly add the liquid ingredients to the dry. Slightly whisk. Pour in strawberry puree and vanilla, and stir to combine.
Heat a griddle/pan over medium low heat. Butter slightly and pour 1/3 or 1/4 cup of batter in the center of the pan. Cook until small bubbles form on the top of the pancake, flip and continue to cook another minute or so until done. Cover in butter/syrup and enjoy!
