Strawberry-Rhubarb Margarita

Description

I was making strawberry rhubarb jam and had tons of leftover cut strawberries and rhubarb. This is what happened. I’ve never actually made margaritas, so please experiment! What did come out for me was tart and sweet and yummy!

Ingredients

  • 5 cups Strawberries
  • 5 cups Cut Rhubarb
  • 3 cups Sugar
  • 20 ounces, fluid Tequila, Or 2 Ounces Per Margarita
  • Ice

Preparation

Combine chopped strawberries and rhubarb in pot with sugar. Bring over a boil over stove and let simmer until rhubarb breaks up and is easy to smush with a potato smasher. Let cool.

For each margarita, put 1 cup of strawberry-rhubarb mix, 2 ounces of tequila, and crush ice in a blender and blend.
