Strawbery Pineapple Baked Oatmeal

    My own creation! You can substitute any fruit you like.

    Ingredients

    • 3 cups Quick Cooking Oats
    • 2 teaspoons Baking Powder
    • 1 teaspoon Salt
    • ½ teaspoons Cinnamon
    • 2 whole Eggs
    • 1 cup Plain Yogurt
    • ½ cups Honey
    • ¼ cups Applesauce
    • ¼ cups Oil
    • 1-⅓ cup Frozen Strawberries
    • ¾ cups Pineapple Tidbits, Drained

    Preparation

    Preheat oven to 350ºF.

    In a medium bowl, combine oats, baking powder, salt, and cinnamon. Add eggs, yogurt, honey, applesauce, and oil; stir well to incorporate. Fold in strawberries and pineapple, and pour into a greased 8×8 inch baking dish. Bake for 35-40 minutes, or until a knife inserted in the center comes out clean.

    Serve warm with extra yogurt, strawberries, or milk.
