Surprise Turtle Cheesecake is a decadent chocolate cheesecake with a hidden layer of caramel and pecans. This easy baked cheesecake starts with a vanilla wafer base, a thick layer of caramel topped with nuts and all covered with a rich, yet tangy chocolate cheesecake. This is the ultimate turtle cheesecake with a sweet surprise in the centre.
Ingredients
- 2 cups Vanilla Wafer Crumbs
- ⅓ cups Butter, Melted
- 14 ounces, weight Kraft Caramels
- ¾ cups Evaporated Milk
- 1 cup Pecans, Chopped
- 16 ounces, weight Cream Cheese
- ½ cups Sugar
- 1 teaspoon Vanilla
- 3 Eggs
- ½ cups Semi-sweet Chocolate Chips, Melted
Preparation
Preheat oven to 350ºF.
Combine crumbs and butter together and press into the bottom and up the sides of a 9-inch springform pan. Bake for 10 minutes. Set aside.
In a heavy-bottomed saucepan or double boiler, melt caramels with evaporated milk. Stir frequently, until smooth. Pour caramel sauce over the crust and top with pecans. Set aside.
Using a hand mixer, beat cream cheese, sugar and vanilla and beat at medium speed until well blended. Add eggs, one at a time, mixing well after each one.
Melt chocolate chips in 15-second intervals in the microwave until completely melted. Blend into the cream cheese mixture. Pour over nuts.
Bake for 40 minutes. Cool on a cooling rack. Chill in the fridge for at least 2 hours before serving. Store leftovers in the fridge.
