Description

These Sweet and Sour Meatballs with Pineapple packed sauce also feature carrot and green bell pepper. These are great as a full meal or as an appetizer!

Ingredients

  • FOR THE MEATBALLS:
  • 2 pounds Ground Beef
  • 2  Eggs
  • 1 cup Bread Crumbs
  • ½ cups Finely Chopped Onion
  • ½ teaspoons Ground Ginger
  • 1 teaspoon Salt
  • ½ teaspoons Ground Black Pepper
  • 2 teaspoons Worcestershire Sauce
  • 2 teaspoons Brown Sugar
  • FOR THE SAUCE:
  • 1 can (20 Oz. Size) Pineapple Chunks, Drained, Juice Reserved
  • ⅓ cups Water
  • ⅓ cups Vinegar
  • 2 Tablespoons Soy Sauce
  • 1 cup Brown Sugar
  • ⅓ cups Cornstarch
  • 1 teaspoon Ground Ginger
  • 1 teaspoon Salt
  • 1  Carrot, Diced
  • 1  Green Bell Pepper, Diced

Preparation

Preheat oven to 400ºF. Prepare a baking sheet by lining it with parchment paper.

Mix ground beef, eggs, bread crumbs, onion, ginger, salt, black pepper, Worcestershire sauce, and brown sugar in a large bowl. Shape into meatballs and arrange on the baking sheet. Bake for about 12–15 minutes. Set aside.

For the sauce, add pineapple juice, water, vinegar, soy sauce, brown sugar, cornstarch, ground ginger, and salt in a large pot and stir until smooth. Cook, covered, until the sauce has thickened.

Add pineapple chunks, carrot, green bell pepper, and the meatballs. Stir to coat the meatballs. Cook for 20 minutes more.
