Description
Roasted sweet potato slices topped with bacon and sharp cheddar cheese. A perfect appetizer to start your Thanksgiving meal!
Ingredients
- 1 whole Sweet Potato
- 1 Tablespoon Olive Oil
- 3 pinches Salt And Pepper
- 5 slices Bacon
- 4 ounces, weight Extra Sharp Cheddar Cheese
- 1 bunch Chives, Chopped
Preparation
1. Preheat oven to 375ºF.
2. Cut potatoes into 1/4 inch thick slices. Try to make them as uniform as possible to allow for even cooking.
3. Lay slices onto a greased cookie sheet, drizzle with olive oil and season with salt and pepper.
4. Roast potatoes in the oven for 12 minutes. Remove and flip the slices, then return to the oven for 5 minutes.
5. As the potatoes are roasting, fry bacon until lightly crisp.
6. Let the bacon cool and drain on a paper-towel-covered plate.
7. Cut bacon into 1-inch pieces.
8. Cut very thin slices of the cheddar cheese. A vegetable peeler is great for this.
9. On each sweet potato, put one piece of bacon and a slice of the cheddar cheese.
10. Return to the oven and broil on high heat, just until the cheese is fully melted, only about 2 minutes or so.
11. Sprinkle with fresh ground pepper and garnish with a few pieces of chopped chive.
