Sweet Potato Breakfast Burrito

Description

A delicious, make ahead, grab-and-go breakfast.

Ingredients

  • 1 package Sweet Potato Puffs (Tots) (20 Ounce Package)
  • 12 whole Eggs
  • 12 ounces, weight Breakfast Sausage
  • 1 whole Bell Pepper
  • 1 whole Medium Sweet Or Yellow Onion
  • 6 slices Muenster Cheese
  • 12 whole 8 Inch Flour Tortillas
  • 1 teaspoon Slap Ya Mama Cajun Seasoning Blend

Preparation

Preheat oven and prepare sweet potato tots according to package directions.

In a large non-stick skillet over medium heat, scramble the eggs with the seasoning mix and a dash of water. Once the eggs are cooked to your desired level of firmness, set aside in a bowl to cool.

Brown the sausage in the same skillet. Once it’s cooked and nicely browned, set it aside in another bowl.

Dice the pepper and onion and put them into the same skillet. Sauté until just tender.

Stack the sliced cheese and cut it in half making 12 slices total.

Warm tortillas in the microwave for 10-15 seconds to make assembly easier.

Take a deep breath and get ready to assemble.

On a sheet of plastic wrap or parchment paper, lay a tortilla. Scoop 1/4 cup scrambled egg, 1 tablespoon sausage, 1 tablespoon of pepper and onion mix, 3-5 sweet potato puffs and a slice of cheese. Fold it into a burrito with the ends tucked in. Wrap in the sheet of plastic wrap or parchment paper. Wrap again in aluminum foil before placing in freezer. Repeat with the remaining filling and tortillas.

To cook the frozen burritos: Microwave for 2 minutes to heat (remember to remove foil before placing in microwave) and enjoy.
