Sweet Potato Oatmeal with Honey Toasted Walnuts

Description

Throw out those bagged oatmeals and try this healthy but nutrient rich oatmeal with sweet potatoes. For sweet potato lovers and haters alike!

Ingredients

  • 1 whole Sweet Potatoes (1 Potato Should Yield 1/2 Cup Of Cooked Potato)
  • ¼ cups Walnuts Or Pecans
  • 1 Tablespoon Honey Or Maple Syrup
  • ⅓ cups Oats
  • 1 cup 1% Milk
  • 1 Tablespoon Flax Seeds (optional)
  • ½ teaspoons Coarse Salt
  • 3 Tablespoons Brown Sugar
  • ½ teaspoons Cinnamon
  • 1 pinch Nutmeg (optional)
  • 1 pinch Cinnamon
  • ½ teaspoons Pure Vanilla Extract
  • 1 Tablespoon Honey Or Maple Syrup (optional)

Preparation

Wash and dry a sweet potato, then prick it all over with a fork. Then microwave * the potato uncovered for five minutes. If it’s not soft by then, microwave 1 minute longer. Check it and if it’s not soft, continue to microwave for 1 minute at a time until it’s done.

*Alternately, you can roast the potato at 350 F for about an hour. Preferably do this the night before—you want something quick in the morning!

Allow the potato to cool slightly. Then scoop out the flesh and mash it in a bowl until smooth.

You can toast the walnuts in a dry skillet for about 5 minutes on medium heat. Remove them from the heat and stir in the honey. If you don’t want to toast them, just mix together the nuts and honey in a small bowl!

In the meantime, in a medium sized pot, heat the oats and milk over medium heat until it comes to a low boil. Stir in the sweet potato and flax seeds (if using). Heat over medium-low heat for about 5-7 minutes, stirring frequently. Add in the salt, sugar, spices, and vanilla. Then heat for about 4 minutes more, stirring frequently.

Then put the oatmeal in a bowl. Add the nuts and if you want, add a little honey or maple syrup on top.
