Description

Fuel up on this delicious Sweet Potato Power Breakfast loaded with chicken sausage, eggs, leafy greens and avocado!

Ingredients

  • 1 whole Sweet Potato, Cubed
  • ½ teaspoons Turmeric
  • ¼ teaspoons Cinnamon
  • ¼ teaspoons Smoked Paprika
  • 2 Tablespoons Water
  • 1 Tablespoon Coconut Oil
  • ½ cups Diced Chicken Sausage
  • 3  Large Eggs, Beaten
  • 1 cup Mixed Greens
  • ½  Avocado, Sliced
  • Sea Salt, to taste

Preparation

In a medium-sized bowl, combine cubed sweet potatoes and spices together.

Heat coconut oil in a large fry pan over medium heat. Add sweet potatoes and water. Cover and cook for 10 minutes, stirring occasionally.

Add chicken sausage and cook an additional 5 minutes or until sausage is cooked through.

Add eggs. Stir for a few minutes until eggs are scrambled. Fold in mixed greens and cook for 1 more minute.

Serve sweet potatoes, chicken sausage, and eggs together in a large bowl or plate. Top with sliced avocado and a pinch of sea salt. Enjoy!
